The Sbaffi Farm. A job, a passion, a true philosophy of life. Ours is a family business focused on Sparkling Wines and Olive Oil. The history of sparkling wines in Fabriano starts in 1622, when the physician Francesco Scacchi wrote the book “On Healthy Drinking”, on the history of winemaking in our Region. In his text, Scacchi tells of lively wines, the ancestors of our traditional method sparkling wine, and the technique used to produce them. Thanks to this valuable work and extensive experimentation, we have recreated an original “Scacchi method®” that enhances the fragrance and intensity of the varietal aroma.
