The first Roero D.O.C.G. “branded” Bajaj is from the 2015 vintage with a circulation of 300 bottles. Since then the demand has been ever-increasing and our Roero has begun to gain approval. It is a full-bodied wine, “important” but not too demanding, with elegant and smooth tannins, due to the “gentleness” of the Roero sands. When you think of an elegant wine, harmonious like a sweet caress on the palate, you can only think of a Roero DOCG!  
Grape variety: Nebbiolo 100% Production area: Monteu Roero Vinification: destemming of fresh grapes. Fermentation in terracotta amphora. Upon reaching the peak temperature, délestage in a steel tank at a controlled temperature at 18 °C for one night. Reassemblies and punching downs during the tumultuous phase. Aging: 6 months in medium toasted third and fourth passage French oak barriques from Bordeaux. Followed by bottle aging for at least 1 year. Average life of the wine: very enjoyable wine right from its release on the market, it also lends itself excellently to aging for more than 20 years. Serving temperature: 18° C
